Bonterra 2007 Cabernet Sauvignon
This Mendocino County producer has benefited from their Certified Organically Grown Grapes since 1993. Bonterra relies on practices like composting, cover crops and biodiversity to construct wines that speak to varietal roots.

Recently, pressed for spare time, I coaxed Nils to hunt for an organic wine at a friend's shop. I'm quite impressed by his selection. I'd like to pair this Cab with mixed greens topped with piquant cheese crumbles and juicy grilled steak strips. A few sips into the first tasting, the notes of soil and leather surfaced memories of horseback riding with my Aunt Gigi during a few autumns of my youth.

Sniff: A cloud of mulling spices swoon around red cherry, red raspberry, plum, chocolate, soil, leather and bell pepper.

Taste: A red of medium build in tannins, acid and finish. Red and dark berries playful and brambly are spiced with black pepper and clove.

Hello lady,

Sounds like a yummy combination -- salad with cheese crubles and steak strips would be great with this Cab. Perhaps with a dusting of toasted walnuts?

Bonterra wines seem to offer pretty good cost performance.

Sues, The wine mags have been having a ball covering this segment of the market. Keep the good news coming! Also, I still enjoy the look of surprise each time someone tastes a "good" organic wine I've poured.
